Strawberry Parfaits

Ingredients:
6 pcs strawberry
2 tbsp sugar
1 tsp lemon zest
1tbsp fresh lemon juice
1.5 cups (2-3 pcs) digestive biscuit
4 tbsp unsalted butter
400 gr cream cheese
4 tbsp OKI Sweetened Creamer
2 tbsp sugar
1 tsp lemon zest

Cooking Instructions
1.Remove and discard the stems from the strawberries, then cut the strawberries into bite-sized pieces. Place in a bowl with the sugar, lemon zest, and lemon juice. Stir well to combine, then let this sit for 15 minutes.
2.In the meantime, crush the digestive biscuit with a rolling pin.
3.Combine the digestive biscuit crumbs and melted butter in a bowl and stir until the crumbs are moistened. Set aside.
4.In a large bowl, whip together the cream cheese and OKI Sweetened Creamer with a hand mixer, for about a minute on medium-high speed, until the mixture is smooth and combined.
5.To assemble the strawberry parfaits, place a few spoonsful of the cream cheese mixture into the bottom of a glass. Next, add a layer of the buttery digestive biscuit crumbs. Top that with a layer of strawberries (leave the excess liquid behind and discard), then repeat with one more of each layer.
6.Enjoy immediately or chill the jars in the fridge for about 30 minutes.
